Food Diversity in Home Economics Education

Abstract

Today, we live in global and multicultural societies, and our identities are often reflected in the way we eat – and in what we do not eat. Food cultures and meals change over time, place and occasion, and we largely create our taste identity through food diversity, reflecting on ‘them’ and ‘us’. This has an impact on Home Economics Education, which is developing and changing, and on the implications of food diversity associated with gender, age, religion, ethnic origin, education, professional background, attitudes, interests, feelings and much more. In the Nordic countries, no guidelines, textbooks or anything else can guide HE teachers in how to work with food diversity in a sustainable way in HEE. A research project in Denmark has the purpose to gather knowledge about the individual teacher’s practise and didactic choices: how and why does the individual teacher handle food diversity in HEE? The study is carried out in collaboration between the six Danish teacher-training university colleges and the Danish School of Education, Aarhus University. This paper is part of a larger mixed-methods design that is expected to be completed by the end of 2021. Here, we present the preliminary findings of the survey part of the study (n=380). By conducting factor- and cluster analysis, we can identify three distinct groups of HE teachers regarding teaching practise and didactic choices concerning food diversity. These groups vary significantly in terms of six factors related to the teachers’: 1) experience of challenges associated with food diversity, 2) consideration for the students, 3) didactic reflexions upon food diversity, 4) influence of own attitudes in teaching, 5) attitudes towards students expanding their taste competencies, an 6) seniority, i.e. how many years they have been teaching HE.
