Insect is considered a promising alternative dietary protein source. However, data on bioaccessibility and bioavailability of insect proteins are very scarce and their unique properties remain unidentified.



To elucidate the nutritional value of insect proteins.



  • To elucidate how the characteristics and nutritional value of insect proteins can be modulated through different processing strategies
  • To elucidate the nutritional value of different insect sources

This will be achieved through following activities:

  • Lab-scale-based studies employing different extraction and enzymatic processing of different insect sources
  • Metabolomics-based profiling of samples collected from both human and animal intervention studies for a complete profiling of relevant metabolites and exogenous and endogenous biomarkers associated with intake of insect protein.
