Rebekka Thøgersen


My main research focus is within nutritional metabolomics using NMR spectroscopy. During my PhD studies, I have focused on investigating whether modulation of processed meat products can be used to beneficially modify endogenous responses in the gastrointestinal tract following ingestion, thereby reducing potentially harmful effects. I defended my PhD thesis “Modulation of the gut microbial-derived and endogenous response to processed meat ingestion through food matrix and background diet effects” in November 2019.
