My research focus is on plant food quality and post-harvest physiology, biology and technology. I specially focus on the impact of pre-harvest (product, cultivar and growing history) and post-harvest factors (cold storage, controlled and modified atmosphere storage, processing and packaging) on fruit and vegetable quality. I work with isolation and quantification of primary and secondary metabolites that are volatile or non-volatile (e.g. carbohydrates, organic acids, polyacetylenes, carotenoids and chlorophylls) in relation to product quality changes. I apply non-destructive such as the VideometerLab and sensory descriptive analysis for quality measurements. I have more than 20 years of experience with cooperative research projects with the industry and other research institutions. I teach and supervise at Aarhus University in postharvest biology and technology, processing and plant food quality.
