Project description:
With my Ph.D, I aspire to create good taste. The initial aim of my work is therefore to understand the sense of taste, and in order to do so, create a method to investigate taste.

Taste is traditionally investigated by asking people to evaluate food products on a selection of features. This approach, however, limits taste research to features that are detectable by the conscious mind.

In this project, I use brain scanning (electroencephalography, EEG) in combination with signal analysis and machine learning to uncover how the brain processes taste in an endeavor to create an objective taste differentiation method for food product innovation.
