What role does taste play in school meal studies? a narrative review of the literature

Abstract

School lunch plays an important role in the overall well-being of students. However, various studies have given evidence for concern that school meals may not yet be satisfactory to students. Evidence shows that taste plays an influential role in students’ food decisions and eating experiences. Methods: This article relies on a bibliographical search of articles that involve empirical interventions around taste and school meals in peer-reviewed, English language journals from 2000 to February 2017). Emergent themes around study aims and strategies were identified. Interventions were grouped according to strategies utilized and include the following: rewards-based, taste exposure, multicomponent approach, and chef collaboration. Findings: Empirical research based on interventions around improving school lunch mainly focus on increasing intake of target foods or food groups, and few studies exist that examine other outcomes associated with improving school lunch such as food enjoyment or well-being. Implications: Future interventions could explore the impact of increasing student engagement around school lunch and opening dialogue around taste on factors such as physical and psychological well-being, empowerment, school enjoyment, and academic outcomes. By taking steps to accurately evaluate and improve the taste of school food and students’ overall eating experience, and by creating avenues for student’s to express their opinions and develop a meaningful sense of contribution, school lunch can play an important role in promoting the well-being of students .
