This project aims at developing functional kale products with high consumer acceptance (desirable sensory characteristics). The project aims to provide much need evidence demonstrating the beneficial effects of green kale for the prevention of obesity/T2D. This scientific evidence will establish the status of green kale as clinically proven, placing novel green kale above the completion. The trial will only use Green Gourmet freeze dried kale product to ensure that correct and equivalent dosage during testing, which is vital in a clinical controlled trial.
