The demand for high quality proteins on the world market increases along with the exponential increase in the global population – especially in the countries with expanding economies the demand for protein will increase dramatically. This opens markets for protein enriched food products. However, the effect of protein quality/composition on metabolic processes in the body is not known in details. There is substantial evidence that higher intake of especially sugar rich foods and some highly processed foods causes an increased prevalence of obesity, diabetes, specific cancers, arteriosclerosis, and other lifestyle related diseases.
The result of this development is; reduced life quality, early death, and increased health expenses. Like sugar sources, different protein sources also show insulin stimulating effects. In the development of protein enriched foods it then become vital to understand the insulin stimulation effect(s) in detail thus they do not promote insulin resistance, as seen by excessive intake of sugar rich products. MR-hyperpolarisation (or Dynamic Nuclear Polarization (DNP)) is a new MR-scanning technology for in-vivo quantification of metabolic processes with an extremely high sensitivity. In the present study the DNP technology will provide a much deeper understanding of the biochemistry which links dietary profile and food product composition with metabolic pathways and diseases with a level of details that cannot be achieved by any other present non-invasive technique. This knowledge will subsequently be used in substantiate shifts in diets with higher protein quality/content and support the food industry in introducing superior food products on the different markets.
