Outdoor Taste Education: Danish Perspectives on Potentials and Challenges for Taste Education in School Gardens and Outdoor Education

Taste education is an emergent topic in research and practice. This study will contribute to the academic discussion on potentials and challenges in Garden based Learning with new perspectives from Denmark where taste as a pedagogical and didactical resource is becoming increasingly popular. The present study will be informed by a general perspective on taste education and a specific focus on this in outdoor education and garden based learning. The study builds on an empirical exploration of how taste education is verbalized and integrated in the Danish school garden project named Gardens for Bellies (GfB) with a double focus on how it is pedagogically activated by staff with different professional backgrounds and experienced by students. It will contribute with new theoretical and didactical perspectives that can point to a more critical reflective and systematic approach to taste education as a key to a more radical involvement of students’ perspectives and of linking the school garden experience to the classroom and wider educational goals. The article will set off from a state-of-the-art of taste education in outdoor education and garden based learning, which leads to the specific research question to be answered.
